2 Sexy Homemade Pizza Recipes (And Yup, One Is In A Slow-Cooker)!
Remember pizza Fridays in the school caf? Maybe yours was square, rectangular, triangular, or octagonular! But, you know what I mean and it was THE BEST pizza to enter your mouth until you graduated. Well, these 2 recipes will put that one to shame. And yup, one is in a slow-cooker!
SLOOOOOW-COOKER PIZZA

STUFF YOU NEED
1. Cooking spray, for slow cooker
2. 1 lb. pizza dough
3. 1 c. pizza sauce
4. 2 c. shredded mozzarella
5. 1/2 c. freshly grated Parmesan
6. 1/2 c. sliced pepperoni
7. 1/2 tsp. Italian seasoning
8. Pinch of crushed red pepper flakes
9. 1 tsp. Freshly chopped parsley, for garnish
LET’S MAKE IT
Prep time: 10 min. Total: 3 hrs. 10 min.
Servings: 4
Step 1
Spray bottom and sides of a large slow cooker with nonstick cooking spray.
Step 2
Press pizza dough into bottom of slow cooker until it reaches all edges and bottom is completely covered. Spoon over pizza sauce and spread, leaving about 1" of dough around edges. Top with cheeses, pepperoni, and spices.
Step 3
Cover slow cooker and cook on low until crust turns golden and cheese is melty, 3 to 4 hours.
Step 4
Remove lid and let cool 5 minutes.
Step 5
Using a spatula, remove pizza from slow cooker. Garnish with parsley, then slice and serve.
NO (OR LOW) GUILT ZUCCHINI CRUST PIZZA

STUFF YOU NEED
1. 3 medium zucchini, or about 4 cups grated zucchini
2. 1 large egg
3. 2 cloves garlic, minced
4. 1/2 tsp. dried oregano
5. 3 c. shredded mozzarella, divided
6. 1/2 c. grated parmesan
7. 1/4 c. cornstarch
8. Kosher salt
9. Freshly ground black pepper
10. 1/4 c. pizza sauce
11. 1/4 c. pepperoni
12. Pinch red pepper flakes, for garnish
13. Basil, for garnish
LET’S MAKE IT
Prep time: 15 min. Total: 50 min.
Servings: 4-6
Step 1
Preheat oven to 425º and line a baking sheet with parchment. On a box grater or in a food processor, grate zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini.
Step 2
Transfer zucchini to a large bowl with egg, garlic, oregano, 1 cup mozzarella, parmesan, and cornstarch and season with salt and pepper. Stir until completely combined.
Step 3
Transfer “dough” to prepared baking sheet and pat into a crust. Bake until golden and dried out, 25 minutes.
Step 4
Spread pizza sauce over crust then top with remaining mozzarella and pepperoni. Bake until cheese is melted and crust is crispy, about 10 minutes more. Garnish with red pepper flakes and basil.
